Creamy dairy free Coleslaw

Summer is a great time for that beautifully Creamy Comfort food Coleslaw. But with being dairy free, it can make it a challenge, so I have made a deliciously creamy coleslaw recipe that contains no dairy.

It is so quick and easy to make for a side dish or salad substitute.

We bring this along with our camping trips, or picnics in the summer. Perfect side dish for BBQ’s meals, or as a condiment in a burger, taco or burritos.

Adjust the vinegar and mayonnaise to your taste preference.

Dairy Free and Gluten Free and Egg Free.

Equipment

  • Large Mixing Bowl
  • Lemon Squeezer
  • Whisk
  • 1 measuring cup
  • 1 Tbsp
  • ½ tsp

Ingredients
  

  • 1 Bag Pre-Chopped Bag of Coleslaw 397 Grams or 2 cups Mixed Green and Red Cabbage with shaved Carrots
  • 3/4 cup Vegan Mayonnaise example Veganaise
  • 2 Tbsp freshly squeezed lemon juice Approx 1/2 lemon
  • 1-2 Tbsp White or Apple Cider Vinegar taste test
  • 1 Tbsp Maple Syrup
  • 1/2 tsp Ground Pepper

Instructions
 

  • In a large mixing bowl, add the Mayo, lemon juice, vinegar, maple syrup and pepper and whisk well. Taste test. If you need more sour add the vinegar, sweet add more maple syrup or add a little salt.
  • Add the chopped Coleslaw to the mix and stir well.
  • Cover and Let sit in fridge for 15 - 30 min to soften and take on that creamy flavour.
  • Serve as a side dish or even on hamburgers, hot dogs, sausages, Portobello Steaks, tuna or salmon sandwiches.
  • Store covered in the fridge for up to 1-2 days.
