Spicy Mint Mango Recipe Vegan Gluten Free

What a gorgeous Tropical Flavoured Recipe. With only 10 minutes to make! This recipe adds sweet and spicy zing to any meal.

Fresh Mango mixed with garlic, ginger, and fresh mint leaves. These flavours go so well together.

ADD A SLIGHT BIT OR A LOT OF HEAT:

In the recipe I added only a 1/8 – 1/4 tsp of Red Pepper Flakes.

If you want to step up your game of heat, then add in 1 Thai Chili or Scotch Bonnet or Habanero. Depending on the intensity you like. For me, I added in 1 red Thai Chili and it was so good. Left that tingle but not intensely.

SERVING SUGGESTIONS:

Serve with Rice or Quinoa

Place on or in any protein of choice. Even plant-based cooked beans or chickpeas.

Can be used as a Tortilla Dip, in Taco’s and wraps.

ADD YOUR PROTEIN:

A good plant-based protein would be to add cooked green peas,  black beans, pinto beans, or lentils. I have even used cooked chick peas.

Simple cook by draining a can of beans, lentils or chickpeas. Add them to boiling water and simmer for 30 minutes. Rinse again and serve.

DIET:

If you are on my weight management program, portion is 1/2 cup cooked rice or quinoa, and add your choice of protein.

A MANGO IS:

A Mango has a large oval stone (or seed) in the centre of the fruit, making it tricky to prepare, but once you have learned how to work around the stone the rest is simple. Ensure that the knife you are using is sharp so that it glides easily through the skin of the mango.

HOW TO CHOOSE AND CUT A MANGO:

Ensure that the knife you are using is sharp so that it glides easily through the skin of the mango.
Then begin to cut the fruit off from the large pit in the center.

Mango Salad

Reg Mango on the right, and the Ataulfo Mango is the one on the left. The Ataulfo Mango is sweeter and less fibres. But both are great.

Equipment

  • Food Processor or Blender
  • Knife
  • 1/2 cup, 1/8 tsp, 1/4 tsp, 1 tsp

Ingredients
  

  • 2 Large ripe mangos
  • 1/2 tsp Fresh ginger
  • 1 tsp Maple Syrup
  • 1 Garlic cloves pressed
  • 1 tsp Fresh Mint chopped
  • 1/4 tsp Onion powder
  • 1/8 tsp Allspice
  • 1/2 tsp Himalayan or Sea Salt ground
  • 1/8-1/4 tsp Red Chili Pepper

To make it extra spicy

  • 1 Thai chili

Instructions
 

  • Wash, dry and peel the mango's. Slice each mango down to the center seed.
  • To the food processor or blender well together 1/2 cup of sliced mango, ginger, salt, maple syrup, white vinegar, allspice, onion, and red chili flakes.
    If you would like it extra spicy, add in the Thai Chili
  • Chop up fresh mint and fold into the mango puree.
  • Chop up 1/2 Mango's and fold into the mango puree.
  • If not using right away, put it in the fridge covered.
  • Suggestions:
    Serve with Rice or Quinoa

    Can be used as a Tortilla Dip, in Taco's and wraps.
  • Store any left overs in the fridge covered.

Notes

Suggestion is to serve with a small carbohydrate:

  • cooked rice or quinoa - 1/2 cup
  • cooked vegetables
  • Tacos Gluten free
  • Wraps Gluten free
