Wash, dry and peel the mango's. Slice each mango down to the center seed.
To the food processor or blender well together 1/2 cup of sliced mango, ginger, salt, maple syrup, white vinegar, allspice, onion, and red chili flakes.If you would like it extra spicy, add in the Thai Chili
Chop up fresh mint and fold into the mango puree.
Chop up 1/2 Mango's and fold into the mango puree.
If not using right away, put it in the fridge covered.
