Quick and Delicious Tomato Sauce – Vegan Gluten Free

No Fuss Tomato Sauce

Simple meal. Some evenings when I’m ready to make dinner, I have no energy. I make this recipe as 1 of my no fuss meals. 5 minutes to prep, and 30 minutes to simmer.

Make it a meal by adding a plant based protein.

  • Add 1 tbsp olive oil into a pan on medium low
  • add in some chopped mushrooms
  • 1/2 cup broth
  • 1 can of rinsed black beans or navy beans.
  • Let simmer for 30 minutes covered. Add a little more broth if necessary. Stir occasionally.

Preplan.

I make sure I always have in my cupboard:
  • dried gluten free pasta or Raman noodles
  • a can of organic peeled tomato’s
  • garlic
  • Italian spices
 
If you don’t like your tomato sauce to taste acidic, then simply add 1-2 tsp of organic coconut sugar or blend tomato sauce with 1 peeled carrot.
 
Simple meal. 5 minutes to put together, and let simmer away for 30 minutes. That’s it.

Equipment

  • Blender or Food Processor
  • STOVE TOP
  • Large Sauce Pan
  • Garlic Press
  • Can opener
  • Spoon
  • cup, 1/2 cup
  • tsp, tbsp

Ingredients
  

  • 3 tbsp Vegan Butter I used Earth Balance or Melts
  • 1 796ml Can of whole peeled tomato's - organic preferred 28 oz
  • 1/2 cup Filtered Water
  • 2 Garlic clove
  • 1 tbsp Italian style seasoning or just Oregano flakes
  • 1 tsp onion powder
  • 1/2 - 1 tsp salt depending on your liking
  • 2 bay leaves
  • 1 tbsp basil flakes or fresh basil

2 Options to add a hint of sweetness instead of acidic sauce:

  • 1 medium carrot peeled and diced - optional For sweetness, omit if you like it tarty tasting
  • 1-2 tsp Coconut Sugar or sugar of choice - optional organic

Instructions
 

  • If you would like a smooth textured pasta sauce, then blend the tomato's with the garlic on high for 30 seconds to 1 minute.
    If using a carrot for sweetness, then blend it in with the tomato's and the 1/2 cup of water.
  • On the stove top, set the large pot or pan on medium low heat. Let the vegan butter and melt it slightly, then pour in slowly the mixed tomato sauce. If you prefer to have a chunky tomato sauce, then do not blend the tomato's.
  • Add in the salt if desired, and the bay leaves. Add in the 1/2 cup of water. Then turn up the heat until the sauce starts to bubble, then immediately cover and turn down the heat to simmer.
    Set timer for 30 minutes.
    Half way, if you left the tomato's in it's whole from, use a fork or masher to slightly break up the tomato's.
    Keep simmering and stirring once in a while.
  • As the tomato sauce is simmering, begin to boil the water for your pasta. Cook pasta to desired tenderness. Strain when cooked, and rinse with cool water. Set aside.
  • To the pan of tomato sauce, add in basil, taste your sauce and adjust the salt according to your taste.
    Turn off the heat, and either add the strained cooked pasta, or add the pasta to your plates.
  • Add just a small pinch of basil or fresh basil on top.
  • Serve with a protein of choice.
  • For any left overs, allow the sauce to cool completely. Place in a container with lid for the fridge or in a zip lock bag for the freezer for a ready to go heat and serve meal.
