Some days, if you are like me, you just don’t have time to fuss around to get a lunch or dinner ready. This recipe is so easy and takes 15 minutes to make. It is designed for 1 person, but you can certainly double or triple the recipe for more people.
If you have never had these noodles before, the texture is just like a noodle without it getting mushy. The taste is a bit nutty, very enjoyable.

Mushroom and Cheese Ramen Noodles Dairy Free
An Easy 1 person lunch or dinner idea. Using the Nacho Cheese Dip Recipe.

Vegan, Vegetarian, Dairy Free, Gluten Free, Diabetic Friendly
- Large frying pan
- Spoon or spatula
- Garlic Press
- 1/3 cup
- 1/4 tsp, tbsp
- 1 square Ramen noodles – gluten free
- 5 Mushrooms sliced ( used the brown cremini's)
- 1 handful Spinach – fresh or frozen (Kale can also be used)
- 1/8-1/4 tsp Red Pepper Flakes – optional
- 1/3 cup Nacho Cheese Dip Mild (Creamy Nacho Cheese Dip Mild, Medium and Spicy – Dairy Free – Nutriment Health & Fitness (nutrimenthealthandfitness.com))
- 1 Garlic clove crushed
- 4 Cherry tomatoes sliced for the end optional
Prepare the Nacho Cheddar Cheese Dip
Cook the mushrooms

Use the large frying pan, add in the butter, mushrooms and garlic. Set on medium heat.
Bring down the heat to medium-low and set timer for 8 minutes. Stir once in a while.
Once done, set aside.
Cook the Ramen Noodles

High heat, add a pot of water with a pinch of salt. When boiling, add in the Ramen noodle. When the water comes back to boiling, use a fork to separate the ramen noodles, and then set timer for 3 minutes.
When finished, strain, and rinse with cold water, and allow to drain. Set aside.

In the large frying pan, add in the Ramen noodles to the mushrooms. Turn on the heat to medium-low.
Add in 1 cup of the Nacho cheese dip and the green vegetable of choice. Stir well to combine.
Add in the red pepper flakes if you would like it a bit spicy.
Stir often, bringing the sauce to a boil, turn down to simmer until the cheese sauce gets to the thickness that you like.
Serve immediately.
If your cheese sauce gets a bit thick, add in a little water. Stir to reheat.
Double the recipe to serve 2 – 3 people.
