Roasted Sweet Potato Bites and Tomato Garlic Oil Dip - Vegan GF

Equipment

  • Oven and stove top
  • Large Pot
  • Small rectangular bakers dish ceramic or stoneware
  • Large baking tray
  • Knife
  • tsp

Ingredients
  

  • 2 Large Sweet Potatoes, peeled and sliced into bite size pieces
  • 1 tsp Allspice - if you don't like then put crushed rosemary, or Italian spices.
  • 1/2 tsp Himalayan or sea salt
  • 1/2 tsp Ground Black Pepper
  • 1 Carton of Cherry tomatoes
  • 8 Large garlic cloves peeled
  • Sunflower Oil or Extra Virgin Olive Oil Can take high heat

Instructions
 

  • Preheat the oven to 400°F
  • In a large pot add the chopped sweet potato and cover with water. Set on stove to high and bring to a boil. Turn down to simmer for 15 minutes.
    Drain and add spread them out across the Large baking Tray lined with parchment paper.
  • In the small rectangular bakers dish add the tomato's, garlic, salt and pepper. Add the sunflower oil until it is half way up the tomato's. Approximately 1 cup depending on the size of the tomato's.
    Mix all together
  • Put both sweet potato's and the tomato garlic oil mix into the preheated oven for 30 minutes. Check the sweet potatoes that they are not burning.
  • Take care taking when removing the heated oil.
    With a fork, press down on the tomato's and garlic to into the oil. Stir and let cool for 15 minutes.
    Add to 1 or more dipping bowls.
    Serve the Roasted Sweet Potato Bites
    Enjoy dipping!

Notes

Add a good source of protein to your salad or even on the side for a complete meal.
