Perfect BBQ Corn on the Cob - Vegan GF

Corn season is one of my favourites times. This recipe is so much nicer than boiling the corn on the cobs.
It is very easy with only 10 minutes to soak, and 20 minutes on the BBQ. You just need to turn it every 5 minutes.
Pair it with your choice of a protein to make it a full meal.

Equipment

  • Clean sink for presoaking corn on the cob
  • BBQ
  • Tongs
  • Hand mixer
  • whisk and small spoon
  • 1/4 tsp

Ingredients
  

  • 6 Cobs of Corn - leave the husks on
  • 1 tbsp Himalayan or sea salt ground This is for the presoak
  • 1/2 cup Vegan Butter or preferred butter. 8 tbsp Leave out to soften
  • 1 Lime zest and juice
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Black Pepper ground

Instructions
 

  • For each of the cobs of corn, pull the outer layer of husks down half way, try not to break them off. Then remove the silk and compost.
    Fold the husks back up into place.
    Place them in a large bucket or sink with cold water and mix in the salt.
    Let them soak for 10 minutes.

Prepare the Whipped Lime Butter while the corn is soaking

  • Use a hand mixer to whip the softened butter first.
    Add in the lime zest, onion powder, garlic powder, and black pepper.
    Then keep the blender going as you slowly pour in the lime juice to the zest you like it.
    Put in the fridge until ready to serve with the corn.
  • Preheat and clean the BBQ to 350°F
  • Remove the corn from the water and shake off some of the water. You do not have to dry them.
    Place them all on the preheated BBQ grill side by side and close the lid. Cook for 20 minutes and make sure to turn them every 5 minutes.
    Once they have cooked you can serve with the husks on, or remove them before serving.
