Crunchy Homemade Granola Protein Cereal - Vegan GF & Nut Free

Equipment

  • Medium size Mixing bowl
  • Small size mixing bowl
  • Large spoon
  • Large baking pan lined with parchment paper
  • 1/2 tsp, 1/2 cup, 1 cup, tbsp
  • Large glass storage jar or Large Mason jar.

Ingredients
  

  • 1 cup Gluten free quick oats or buckwheat flakes
  • 1/2 cup Shredded Coconut organic if possible
  • 2 tbsp Chia seeds
  • 1/2 cup Plant-based milk unsweetened. I used Oat Milk.
  • 2 tbsp Plant-based milk unsweetened for adding in if needed.
  • 2 tbsp Hemp Heart seeds
  • 2 tbsp Coconut sugar
  • 1/2 tsp Himalayan or Sea Salt ground

Optional

  • 1/3 cup Dairy and Gluten free Chocolate Chips. I used the Enjoy Life dark chocolate chips
  • Pinch Cinnamon spice

Instructions
 

  • Preheat oven to 350°F
  • Small mixing bowl, add the chia seeds and 8 tbsp of plant-based milk. I used unsweetened oat milk. Stir well and let side for 10 minutes while the oven heats up. This gives it time to thicken up.
  • Large mixing bowl, add the oats or buckwheat flakes, hemp heart seeds, salt, and coconut sugar. Use the spoon to blend well together.
    Stir in the thickened chia seed mix.
    Add in 2 tbsps more of the plant-based milk. Stir well to combine.
    Optional: Stir in the chocolate chips and cinnamon.
  • Large baking pan, add the granola mix and spread out evenly on the parchment paper.
    Press down firmly using the bottom of the spoon.
    Bake for 10 minutes. The top should be beginning to slightly golden.
    Flip the granola over and pat down. Break them apart into chunks is fine. Bake for 10 minutes.
    Let cool on the pan for 15 minutes to harden.
  • Enjoy a bowl with some plant based milk.
  • Store unused portions in a glass jar for 1 week.
