INGREDIENTS:
* 1 head of cauliflower
* 1 tbsp Garlic crushed
* Butter – plant-based (I use Melts)
* Cream cheese- plant-based (I used Violife cream cheese)
* Mayonnaise – plant-based (I use Vegenaise)
* Nutritional yeast – to bring out a cheese type flavour
* spice Rosemary, Ground black pepper
* optional – 1 spring onion

Buttery Garlic Mashed Cauliflower - Vegan GF

Equipment
- Large pot with lid
- Medium size pan
- Blender or Food Processor
- 1/4 cup
- 1/4 tsp, tbsp
- Spatula
Ingredients
- 1 head Cauliflower
- 3 tbsp Plant-based butter
- 1/2 container Vegan cream cheese 100grams I used Violife brand cream cheese
- 1/4 cup Mayonnaise plant-based I used Vegenaise.
- 3-4 tbsp Nutritional yeast
- 1 tsp Rosemary dried or 1 tbsp Rosemary Fresh
- 1 tbsp Garlic crushed. Approximately 5-6 depending on size.
- 1/4 tsp Onion powder
- 1/4 tsp Black pepper. Add more for a bit of spiciness.
Garnish
- 1 Green onion sliced optional but delicious
Instructions
- Remove the stem of the cauliflower. Pull the cauliflower apart into large pieces.Rinse under water.Remove as much of the hard stems for each floret and cut into bite size chunks.
- Large pot, add in the cauliflower, and cover with water.Set to high heat and bring to a boil. Add the lid and turn down to medium low.Stir once in a while.Cook for 10 - 15 minutes, until they are soft but not mushy.Stain and allow to drain most of the water.
- Medium size pan add the butter, garlic, cream cheese, mayonnaise, rosemary, onion powder, black pepper, and Nutritional yeast.Set on medium, stir well together, and allow the flavours heat up together for 2-3 minutes. It will start to thicken up a bit.Remove from heat.
- Add the cauliflower to the blender or food processor. You may have to add half first and blend for a few seconds. Then add the rest of the cauliflower and the sauce into the blender or food processor and mix well for 1 minutes. Use the spatula to clean the sides.Mix again for 1 minute. It should be creamy and not lumpy. Taste test.Serve immediately so it stays warm.
- Store covered in fridge. Reheat the next day.
